I must admit I'm enjoying my time in the kitchen more and more. But in summertime, eating can feel more like a chore to me because of the heat. In more unbearable locations like humid environments, eating and feeling full is even more uncomfortable. A piece of watermelon all day and I'm just about good.
HOWEVER, we all know that healthy eating is important year round and I've been trying to remedy my ailments by coming up with creative things I can make in batches and nibble on along and along. So, I'm proud to introduce my healthy and delicious SUMMER SALAD.
I just go to my favorite Trader Joe's store and stock up on things I think would taste good.
- Baby cartrots
- Radishes and peppers
- Various nuts (don't overdo it)
- Cubed chicken (optional - I like it for an extra protein source)
- Snow peas
- Bow tie pasta
- 1 jar of Trader Joe's Thai Curry Sauce
